What is End of Life? (EOL)

When a product reaches the end of its useful life, the vendor will stop marketing, selling or sustaining it. In the case of Windows, a newer, more secure version comes out deeming its previous version not usable. It still functions, however once all of its basic functions aren't supported anymore, it's not recommended users continue using it.

The biggest reason not to use older versions of Windows is security risks. Since there's no more updates, you will not be covered should you get a virus or a cyber attack.
